Saturday, we didn\u2019t get much done\u2026 but did opt to run out to Carl Blackwell and test our new Emeriti cards\u2026 they weren\u2019t checking ?  and we didn\u2019t see a need<\/a> to stop in at the rangers office either so still not sure they work to get access or just ? We were told they would but you can\u2019t always believe some of the stuff your told.. it may be access but we still have to pay for vehicle entrance?  Anyway we stopped and picked up some needed items at the store and a plan was made to have \u201cgreen chili chicken<\/a> enchiladas\u201d for dinner\u2026 so rather than cook one<\/a> we spotted that they had some \u201con sale\u201d rotisserie chickens for $2.49\u2026 hey that works for us\u2026 got one<\/a> and we carved out about half<\/a> of the meat<\/a> (mostly breast meat) for the enchiladas\u2026 Sherrie , now that she is retired, is doing more cooking and this was her dish\u2026 I carved chicken<\/a> and stirred the white cheese<\/a> sauce\u2026 <\/p>\n

ok the tortillas filled with chicken<\/strong> and fiesta cheese<\/a> and some onion chopped\u2026 then put them in a dish<\/a> for baking..<\/p>\n

pour on the cheese<\/strong> sauce that has a can of green chilies in it and bake till they are good and hot\u2026 and oh boy\u2026 haven\u2019t had that in years\u2026 several of my family doesn\u2019t like or can\u2019t eat cheese<\/strong> so we had not put this out\u2026 <\/p>\n

Sherrie also was busy and made a big loaf of banana bread\u2026 goes great for desert with some butter and sugar cinnamon or honey on it\u2026 hot of course<\/p>\n

Well, with that done for Saturday night we had half<\/a> a chicken<\/strong> left so what to do?  hey\u2026 what about fixing up some stuffed jalapeno’s and re-heat the chicken<\/strong> on the wood grill?  so\u2026 Sunday I got some BIG jalapenos\u2019 and some cream cheese\u2026 mixed up a half<\/strong> and half<\/strong> cr\u00e8me cheese<\/strong> and fiesta cheese<\/strong> for stuffing and\u2026. <\/p>\n

Ready for the grill<\/a> \u2013 oh yea, everything goes better with Bacon!\u2026 right?<\/p>\n

on the grill<\/a> as is the chicken<\/strong> to the left wrapped in foil to keep it moist\u2026. set to 375+ and let it go for 30 minutes or more till the bacon<\/strong> is done\u2026<\/p>\n

well the cheese<\/strong> was pouring out but the bacon<\/strong> was not crispy like I want but it was done\u2026 just didn\u2019t look crisp on top\u2026 but it was some good! Must have been damn good as I only got two of the peppers\u2026 but had to eat a bit more chicken\u2026 even with that we have maybe a cup of chicken<\/strong> left that will be used in ?  soup or gumbo?  not sure just yet\u2026 <\/p>\n

I am feeling a trend here and figure I need<\/a> to add a bit more time to my exercise times\u2026 so probably off to the gym I need<\/strong> to do\u2026 ha! <\/p>\n
